Restaurants

When I began my chefs apprenticeship in Melbourne in 1981 it was my dream to one day own my own restaurant. This finally happened in August 2001 when myself and three friends opened The Providores and Tapa Room on London's Marylebone High Street. Previous to that I'd been executive chef, but not owner, of The Sugar Club in Soho and Notting Hill, and before that executive chef at the Mayfair private members club Green Street. However, since The Providores opened I have become involved in many other restaurants and food businesses, some as consultant, some as investor. This was something I hadn't foreseen, but that I have enjoyed immensely.

This is my signature restaurant located in the 5 star SKYCITY Grand Hotel in Auckland, New Zealand. The restaurant opened on 6th April 2005 and has won numerous awards for both it's cuisine and it's design. My involvement goes back to 2003, to a meeting at the launch of the wonderful Craggy Range vineyards in Hawkes Bay, at which I was cooking, when I was approached to see if I would be interested in setting up a restaurant in my home country. I was involved in the design of the restaurant even before we'd appointed our architect Tom Skyring, working closely with both him and our kitchen design teams. I also chose to use contemporary New Zealand ceramics as the decorative theme for the restaurant. I return to New Zealand 4 times a year to introduce seasonal menu changes with my team.
