When I began my chefs apprenticeship in Melbourne in 1981 it was my dream to one day own my own restaurant. This finally happened in August 2001 when myself and three friends opened The Providores and Tapa Room on London's Marylebone High Street. Previous to that I'd been executive chef, but not owner, of The Sugar Club in Soho and Notting Hill, and before that executive chef at the Mayfair private members club Green Street. However, since The Providores opened I have become involved in many other restaurants and food businesses, some as consultant, some as investor. This was something I hadn't foreseen, but that I have enjoyed immensely.

In 2001 I was approached by three New Zealanders to act as a consultant to help them set up their dream. A London based burger restaurant specialising in the best, most delicious, gourmet burgers. I thought it would be fun and I knew it would be successful. Adam, Greg and Brandon went on to create a foodie phenomenon – they can rightly claim that GBK has been the catalyst to rejuvenate the burger in the UK with many copy-cat burger bars opening in it's wake. They sold the business to Clapham House Group, an innovative restaurant group whom I still work for.

Currently there are more than 48 GBK's from West Hampstead to Brighton, with outlets in Kuwait, Istanbul and Dubai where you can also enjoy our burgers.
